1 Chicken Breast per person
1 400g Can Chapped Tomatoes (Italian Style if possible)
40g per person shredded pizza cheese mix or mozzarella
Garlic Granules
Mixed Herbs
Salt & pepper
Fry light or Olive oil spray
any toppings that you like on your pizza
1. Butterfly the chicken breasts and pound thin - I did this part before leaving home. I find it easiest to do this with a rolling pin between to sheets of cling film.
2. Once onsite and ready to cook spray a frying pan with fry light or Olive Oil and fry off the chicken - do in batches if needed. Ensure that the chicken is cooked through.
3. Return all chicken to pan, cover in chopped tomatoes, add garlic herbs and seasonings to taste. I add a pinch of chili flakes for a kick! Cook about 10 minutes or until sauce is heated through- really depends on sauce to chicken ratio. - 2 people is typically under 5 minutes.
4. Add whatever toppings you like to the pizza- directly on top of the chicken and sauce. If these need heating to get to the correct temperature of texture now is the time. Then add the cheese!
5 Let the cheese melt and serve.
Great with a side salad, or fried courgettes.
